Instructions
Preheat oven to 425°F and line a baking sheet.
Toss sweet potatoes with olive oil, salt, pepper, paprika, and cumin. Roast 25-30 minutes.
Sauté onion in olive oil until soft, add garlic, then cook ground beef until browned.
Stir in tomato paste, oregano, salt, pepper, and vinegar. Fold in spinach until wilted.
Assemble bowls with sweet potatoes and beef. Serve warm or store.
