Ingredients

Sweet Potatoes

  • 2 pounds sweet potatoes
  • 1 ½ tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • ¾ to 1 cup guacamole (or avocado sauce) (see Notes)
  • ½ small red onion (minced)
  • ½ cup canned corn

Chopped cilantro

  • Chopped cilantro (for garnish)

Mexican hot sauce

  • Mexican hot sauce (like Cholula) (for serving)

Instructions 

  • Preheat oven to 450°F (232°C).
  • Slice sweet potatoes into ¼-inch rounds, toss with olive oil, garlic powder, chili powder, and salt. Arrange on baking sheets.
  • Bake for 10 minutes, flip, then bake another 10 minutes until soft and golden.
  • Top each round with guacamole, minced red onion, corn, and cilantro. Serve with hot sauce if desired.

Notes

Leaving out for up to 2 hours at room temperature is fine, making it great for parties.
