Instructions
Preheat oven to 450°F (232°C).
Slice sweet potatoes into ¼-inch rounds, toss with olive oil, garlic powder, chili powder, and salt. Arrange on baking sheets.
Bake for 10 minutes, flip, then bake another 10 minutes until soft and golden.
Top each round with guacamole, minced red onion, corn, and cilantro. Serve with hot sauce if desired.
Notes
Leaving out for up to 2 hours at room temperature is fine, making it great for parties.
