Sweet Potatoes
2poundssweet potatoes, peeled and diced into 1-inch cubes
1tablespoonolive oil(plus more for cooking)
1teaspoonsalt(divided)
1/2teaspoonblack pepper(divided)
1.5poundslean ground beef (or ground turkey)
1mediumyellow onion, finely diced
2clovesgarlic, minced
1teaspoonsmoked paprika
1/2teaspoondried oregano
1/4cupbeef broth(or vegetable broth)
2cupsshredded mozzarella cheese
1/4cupfresh parsley, chopped(for garnish)
Instructions
Preheat oven to 400°F (200°C). Roast sweet potatoes with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper for 15-20 minutes until tender.
Brown ground beef in a skillet over medium-high heat, then drain excess grease.
Add diced onion, cook 5-7 minutes, then stir in garlic, paprika, oregano. Pour in broth, simmer 2-3 minutes, then season with remaining salt and pepper.
Spread roasted sweet potatoes in a baking dish, top with beef mixture, then sprinkle with mozzarella cheese.
Bake for 10-15 minutes until cheese melts and bubbles. Garnish with parsley before serving.
