Instructions
Fry walnuts in olive oil for 5 minutes, then add tamari, maple syrup, and smoked paprika; cook 2 more minutes.
Add garlic and spinach; cook until wilted, then set aside.
Melt vegan butter and cook sweet potato slices until tender and golden, about 10 minutes.
Assemble sandwiches with vegan cheese, walnut mixture, and spinach; cover and melt cheese over low heat.
Top with another sweet potato slice, garnish with chives, and serve.
Notes
For extra flavor, add a dash of hot sauce or serve with your favorite dipping sauce.
