A delicious vegan twist on classic grilled cheese, featuring sweet potatoes, walnuts, and melty vegan cheese for a hearty, flavorful meal.

Ingredients

Oil & Nuts

  • 1 tsp olive oil
  • 120 g walnuts, roughly chopped

Sauces & Spices

  • 1 tbsp tamari soy sauce
  • 1 tbsp maple syrup
  • ½ tsp smoked paprika powder

Garlic & Vegetables

  • 2 cloves garlic, minced
  • A handful fresh spinach

Dairy & Vegetables

  • 1 tsp vegan butter
  • 2 large sweet potatoes peeled & cut into ¼-inch slices
  • Salt and pepper to taste

Vegan Cheese & Garnish

  • 4-5 slices vegan cheese slices
  • Fresh chives to serve

Instructions 

  • Fry walnuts in olive oil for 5 minutes, then add tamari, maple syrup, and smoked paprika; cook 2 more minutes.
  • Add garlic and spinach; cook until wilted, then set aside.
  • Melt vegan butter and cook sweet potato slices until tender and golden, about 10 minutes.
  • Assemble sandwiches with vegan cheese, walnut mixture, and spinach; cover and melt cheese over low heat.
  • Top with another sweet potato slice, garnish with chives, and serve.

Notes

For extra flavor, add a dash of hot sauce or serve with your favorite dipping sauce.
