Instructions
Preheat oven to 350F and prepare a 9x13 dish.
Cook beef with onion and seasonings until browned, then add beans, corn, salsa, and 1 cup cheese; warm until cheese melts.
Layer crushed tortilla chips in dish, top with beef mixture, then remaining cheese.
Bake for 15-20 minutes until bubbly and cheese is melted.
Top with tomatoes, scallions, avocado, olives, lettuce, cilantro, and sour cream before serving.
Notes
For extra flavor, add hot sauce or more salsa as desired.
