  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1/2 medium yellow onion (chopped)
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cumin
  • 2 cups tortilla chips (crushed)
  • 1 14 oz can black beans (rinsed and drained)
  • 1 12 oz can corn (drained)
  • 1 15.5 oz jar salsa
  • 2 cups cheddar (shredded, divided)
  • Grape tomatoes (halved) Grape tomatoes
  • Scallions (chopped) Scallions
  • Avocado (chopped) Avocado
  • Olives (sliced) Olives
  • Lettuce (chopped) Lettuce
  • Cilantro (chopped) Cilantro
  • Sour cream Sour cream

Instructions 

  • Preheat oven to 350F and prepare a 9x13 dish.
  • Cook beef with onion and seasonings until browned, then add beans, corn, salsa, and 1 cup cheese; warm until cheese melts.
  • Layer crushed tortilla chips in dish, top with beef mixture, then remaining cheese.
  • Bake for 15-20 minutes until bubbly and cheese is melted.
  • Top with tomatoes, scallions, avocado, olives, lettuce, cilantro, and sour cream before serving.

Notes

For extra flavor, add hot sauce or more salsa as desired.
