Ingredients

For the Taco Beef

  • 1 lb ground beef
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup tomato sauce
  • 1 tablespoon olive oil

For the Bowls

  • 3 cups cooked white or brown rice
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • 1 diced avocado
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup sour cream
  • ¼ cup salsa

For Garnish & Serving

  • Fresh cilantro
  • Lime wedges

Instructions 

  • Heat olive oil in a large skillet over medium heat, cook ground beef until browned, then drain excess fat.
  • Stir in chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper; toast spices for 30 seconds, then add tomato sauce and simmer for 4-5 minutes.
  • Warm cooked rice while beef simmers.
  • Assemble bowls with rice, seasoned beef, lettuce, tomatoes, avocado, and cheese. Top with sour cream, salsa, cilantro, and lime wedges.
