A delicious and healthy twist on tacos, these stuffed sweet potatoes are easy to prepare and perfect for a quick dinner.
Ingredients
Meat and Seasonings

lean ground beef

onion (chopped)

cloves
garlic (minced)

taco seasoning

chunky salsa

water

Sweet Potatoes

sweet potatoes (about 12-14 ounces each)
Toppings
to taste
shredded Mexican blend cheese

diced tomato

diced avocado or guacamole

Instructions
Cook ground beef, onion, and garlic in a skillet until browned. Add taco seasoning and salsa, then simmer with water until thickened.
Poke holes in sweet potatoes and microwave on high for 8-10 minutes, turning halfway. Let cool slightly, then slice and fluff inside.
Fill sweet potatoes with taco meat and top with cheese, tomato, avocado, guacamole, or sour cream as desired.
