A flavorful and easy-to-make dish featuring tender beef and vibrant vegetables in a savory teriyaki sauce, served over rice.

Ingredients

Meat

  • 1.1 lbs flank steak or sirloin, thinly sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1/3 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch mixed with water
  • 1 medium carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 5 ounces broccoli florets
  • 2 spring onions sliced, plus extra for garnish
  • 1 tablespoon sesame seeds for garnish
  • 2 cups cooked white or brown rice

Instructions 

  • Combine soy sauce, mirin, honey, rice vinegar, garlic, and ginger in a saucepan. Simmer and whisk in cornstarch slurry until thickened, then set aside.
  • Toss beef slices with cornstarch to coat evenly.
  • Stir-fry beef in hot oil until browned, then remove from skillet.
  • Stir-fry vegetables until tender-crisp, then combine with beef and sauce. Heat briefly.
  • Serve over rice, garnished with spring onions and sesame seeds.

Notes

For a healthier option, use less honey or brown sugar and opt for brown rice.
