A quick and flavorful stir fry combining tender chicken with crisp vegetables in a savory teriyaki sauce.

Ingredients

Protein

  • 2 pieces boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Pepper to taste Pepper
  • 3 tablespoons cornstarch
  • 3 tablespoons olive oil (divided)
  • 1/2 medium onion
  • 2 cups broccoli florets
  • 1/2 red red bell pepper
  • 1/2 cup chicken broth
  • 3 tablespoons mirin (see note)
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • 1/4 cup brown sugar (packed)
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic (minced)

Instructions 

  • Prepare ingredients: chop vegetables, cut chicken, and whisk sauce ingredients.
  • Coat chicken pieces with garlic powder, pepper, and cornstarch.
  • Cook chicken in two batches in hot oil until browned and cooked through, then set aside.
  • Sauté onions, then add broccoli and peppers; cook until tender-crisp.
  • Return chicken to pan, add sauce, and cook until thickened. Serve immediately.

Notes

For best results, cook chicken in batches to ensure proper browning.
