This hearty Texas-style beef chili is rich, flavorful, and tender, perfect for a comforting meal that will impress everyone at the table.

Ingredients

Meat

  • 2 lb beef chuck roast, cut into 1 inch cubes
  • 2 tbsp avocado oil

Vegetables

  • 1 white onion diced white onion
  • 2 diced bell peppers
  • 1 diced poblano pepper
  • 1 minced jalapeno
  • 6 cloves garlic cloves, minced

Canned Goods

  • 2 cans chopped tomatoes
  • 1 can kidney beans, drained
  • 1 can hatch chilis

Liquids & Spices

  • 4 cups chicken or beef stock
  • 1 tbsp fish sauce
  • 3 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tsp chipotle powder
  • 2 tsp oregano
  • 1 tbsp cumin
  • 1 bay leaf bay leaf
  • 1 lime juice from lime
  • 0.25 cup cilantro, chopped for garnish

Optional Toppings

Instructions 

  • Season beef with salt and pepper, pat dry, then sear in hot oil until golden, about 2 minutes per side. Remove and set aside.
  • Sauté onions, bell peppers, and poblano until translucent, about 5-10 minutes. Add jalapeno and garlic, cook for 2 minutes.
  • Add chopped tomatoes, beans, chilis, stock, fish sauce, and spices. Return beef to the pot and simmer covered for 2 hours until tender.
  • Remove bay leaf, stir in lime juice and cilantro. Adjust seasoning and serve with optional toppings.

Notes

For extra flavor, let the chili sit for a few hours before serving to meld the flavors.
