A delicious and portable Thai-inspired meal featuring creamy peanut sauce, tender chicken, and fresh vegetables layered in jars for easy storage and serving.

Ingredients

Sauce

  • ½ cup creamy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey (or maple syrup)
  • 1 tbsp sesame oil
  • 1–2 tsp sriracha (optional, for heat)
  • 1 clove garlic, minced
  • 2–3 tbsp warm water (to thin)

Noodles & Vegetables

  • 8 oz cooked rice noodles (or soba noodles), cooled
  • 2 cups cooked chicken breast, sliced or shredded
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup thinly sliced bell pepper (red, yellow, or both)
  • ½ cup chopped fresh cilantro
  • ½ cup chopped roasted peanuts

For Serving

  • to taste Lime wedges

Instructions 

  • Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha (if using), garlic, and warm water until smooth.
  • Divide sauce evenly into 4 jars, layer chicken on top to soak in the sauce, then add noodles, carrots, cucumber, and bell pepper.
  • Top with cilantro and peanuts, seal jars, and refrigerate up to 4 days.
  • Shake or toss the jars before serving, and add lime wedges for extra brightness.

Notes

Adjust sriracha for heat preference and store jars upright for freshness.
