Ingredients
Sauce
½cupcreamy peanut butter
3tbspsoy sauce
2tbsprice vinegar
2tbsphoney (or maple syrup)
1tbspsesame oil
1–2tspsriracha (optional, for heat)
1clovegarlic, minced
2–3tbspwarm water (to thin)
Noodles & Vegetables
8ozcooked rice noodles (or soba noodles), cooled
2cupscooked chicken breast, sliced or shredded
1cupshredded carrots
1cupsliced cucumber
1cupthinly sliced bell pepper (red, yellow, or both)
½cupchopped fresh cilantro
½cupchopped roasted peanuts
For Serving
to tasteLime wedges
Instructions
Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha (if using), garlic, and warm water until smooth.
Divide sauce evenly into 4 jars, layer chicken on top to soak in the sauce, then add noodles, carrots, cucumber, and bell pepper.
Top with cilantro and peanuts, seal jars, and refrigerate up to 4 days.
Shake or toss the jars before serving, and add lime wedges for extra brightness.
Notes
Adjust sriracha for heat preference and store jars upright for freshness.
