Ingredients

Crumb Topping

  • 0.5 cup all-purpose flour
  • 0.25 cup granulated sugar
  • 0.5 teaspoon ground cinnamon
  • 0.125 teaspoon salt
  • 0.25 cup unsalted butter, melted

Muffin Batter

  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons apple pie spice
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 0.25 cup light brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 0.5 cup buttermilk (room temperature)
  • 0.5 cup full-fat sour cream (room temperature)
  • 2 medium apples (peeled, cored, finely chopped)

For Serving

Instructions 

  • Mix crumb ingredients and set aside.
  • Combine wet ingredients and dry ingredients separately, then mix together.
  • Fold in chopped apples.
  • Fill muffin tins and sprinkle with crumb topping.
  • Bake at 375°F (190°C) for 20 minutes until golden.
