A delicious and nutritious breakfast casserole combining fresh berries, protein, and a hint of lemon for a satisfying start to your day.

Ingredients

Bread

  • 15 oz gluten free white bread (I used a loaf of Canyon Gluten Free Country White Bread)
  • 0.5 cup raspberries (fresh or frozen)
  • 0.5 cup blueberries (fresh or frozen)
  • 0.5 cup strawberries (sliced thin, fresh or frozen)
  • 4 eggs eggs
  • 2 cups liquid egg whites
  • 0.5 cup cottage cheese
  • 1.25 cups almond milk
  • 0.33 cup maple syrup
  • 1 zest lemon zest (from one lemon)
  • 2 tbsp lemon juice
  • 2 tsp almond extract
  • 1 tsp ground cinnamon
  • 1 scoop vanilla protein powder

Instructions 

  • Preheat oven to 350°F (175°C). Toast bread cubes for 10 minutes, stirring halfway.
  • Spray a 9x13 inch dish, add toasted bread, and sprinkle berries on top.
  • Blend remaining ingredients until well combined, then pour over bread and berries.
  • Cover and refrigerate overnight or bake immediately at 350°F for 45-50 minutes until set.
  • Serve with maple syrup and whipped cream if desired.

Notes

Use fresh berries for best flavor and texture.
