Ingredients

Dry ingredients

  • 1 ½ cups whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet ingredients

  • ½ cup coconut oil
  • ½ cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened almond milk
  • ½ cup dark chocolate chips
  • 1 tablespoon ground flaxseed (optional)

Instructions 

  • Sift dry ingredients into a bowl to remove lumps.
  • Whisk melted coconut oil, honey, eggs, and vanilla until smooth.
  • Combine wet and dry ingredients, then add almond milk to reach a scoopable batter.
  • Fold in chocolate chips evenly.
  • Spoon batter into muffin tins and bake at 350°F (175°C) for 18 minutes. Cool before serving.
