These delicious energy bites combine toasted coconut, crunchy macadamia nuts, and wholesome oats for a nutritious snack.

Ingredients

Coconut

  • 0.5 cup unsweetened shredded coconut

Nuts

  • 0.33 cup chopped macadamia nuts

Oats

  • 0.75 cup old-fashioned rolled oats

Cereal

  • 0.5 cup crispy brown rice cereal ((or regular))

Flaxseed

  • 3 tablespoons ground flaxseed

Nut Butter

  • 0.5 cup creamy almond butter

Sweetener

  • 0.33 cup pure maple syrup

Flavoring

  • 1 teaspoon vanilla extract

Instructions 

  • Toast the coconut in a skillet until golden. Add to a large bowl.
  • Pulse macadamia nuts in a food processor until finely chopped. Add to bowl.
  • Pulse oats until lightly chopped; add to bowl with cereal, flaxseed, almond butter, maple syrup, and vanilla. Mix well.
  • Chill mixture in the refrigerator for at least 30 minutes.
  • Form mixture into 1-1.5 inch balls. Chill before serving.

Notes

Chilling the mixture helps it firm up for easier shaping.
