A warm and flavorful soup made with fresh tomatoes and basil, perfect for a comforting meal.

Ingredients

Vegetables

  • 4 cups fresh tomatoes, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups fresh basil leaves
  • 4 cups low-sodium vegetable broth

Oils & Seasonings

  • 2 tablespoons extra virgin olive oil

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
  • Stir in minced garlic and cook for 1 minute. Add chopped tomatoes and cook for 5 minutes until softened.
  • Pour in vegetable broth, bring to a boil, then simmer uncovered for 20 minutes.
  • Blend the mixture until smooth using an immersion or standard blender.
  • Stir in fresh basil leaves, season with salt and pepper, then serve hot.

Notes

For a creamier texture, add a splash of heavy cream or coconut milk before serving.
