A warm and flavorful soup made with fresh tomatoes and basil, perfect for a comforting meal.
Ingredients
Vegetables

fresh tomatoes, chopped

onion, chopped
3
cloves
garlic, minced

fresh basil leaves

low-sodium vegetable broth

extra virgin olive oil
Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
Stir in minced garlic and cook for 1 minute. Add chopped tomatoes and cook for 5 minutes until softened.
Pour in vegetable broth, bring to a boil, then simmer uncovered for 20 minutes.
Blend the mixture until smooth using an immersion or standard blender.
Stir in fresh basil leaves, season with salt and pepper, then serve hot.
Notes
For a creamier texture, add a splash of heavy cream or coconut milk before serving.
