A quick and flavorful cold pasta salad combining tuna, sweet corn, and fresh herbs, perfect for a light lunch or picnic.

Ingredients

Pasta

  • 8 oz elbow macaroni or rotini

Tuna

  • 1 can 5 oz chunk light tuna, drained

Sweet Corn

  • 1 cup sweet corn canned or frozen

Mayonnaise

  • 0.5 cup mayonnaise

Dijon Mustard

  • 1 tbsp Dijon mustard

Fresh Parsley

  • 0.25 cup fresh parsley, chopped

Bell Peppers

  • 1 cup diced bell peppers (optional)

Instructions 

  • Cook pasta until al dente, then rinse under cold water.
  • Mix tuna and sweet corn in a large bowl.
  • Whisk mayonnaise and Dijon mustard; season with salt and pepper.
  • Add cooled pasta, bell peppers, and parsley to tuna mixture; fold gently.
  • Chill for at least 30 minutes before serving.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
