A quick and flavorful meal combining tuna, peppers, and beans in a pita for a satisfying lunch or dinner.

Ingredients

Canned Tuna

  • 2 cans Tuna (10 Ounces)

Vegetables

  • 0.5 cup Green Pepper (Chopped)
  • 0.5 cup Red Pepper (Chopped)
  • 0.5 cup Red Onion (Chopped)

Other Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Great Northern Beans (Reduced Sodium)
  • 0.5 packet Fajita Seasoning Mix
  • 6 tablespoons Salsa
  • 1 piece Pita Bread
  • 1 tablespoon Salsa
  • 1 tablespoon Sour Cream (Fat Free)
  • 0.5 serving Mexican Cheese (Reduced Fat)

Instructions 

  • Drain tuna into a bowl.
  • Chop green pepper, red pepper, and red onion.
  • Heat olive oil in a pan over medium-high heat.
  • Add peppers and onion; stir and cook for 1 minute.
  • Add beans; stir and cook for 5 minutes, stirring every 30 seconds.
  • Reduce heat to medium; cook for 1 minute.
  • Add salsa, tuna, and fajita seasoning; cook for 3 minutes, stirring.
  • Cut pita in half.
  • Fill pita with tuna mixture, salsa, sour cream, and cheese.

Notes

Use reduced sodium beans and seasoning for a healthier option.
