A rich and creamy Tuscan chicken pasta dish packed with sun-dried tomatoes and spinach, perfect for a satisfying meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts, sliced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 8 oz fettuccine pasta

Seasoning

  • to taste Salt and pepper

Instructions 

  • Cook pasta according to package instructions, drain, and set aside.
  • Heat olive oil in a skillet, cook chicken until browned, then remove and set aside.
  • In the same skillet, cook garlic for 1 minute, then add chicken broth and heavy cream, simmer.
  • Stir in Parmesan, sun-dried tomatoes, and spinach; cook until spinach wilts. Return chicken, add pasta, toss to combine.

Notes

For extra flavor, garnish with additional Parmesan before serving.
