A hearty and flavorful Tuscan-inspired chicken soup packed with vegetables, beans, and herbs, perfect for a comforting meal.

(rinsed and drained)

skinless cooked chicken breasts

Instructions
Heat olive oil in a large saucepan over low-medium heat. Cook onion for 10 minutes until softened.
Add garlic and thyme; cook for 2 minutes until fragrant.
Add celery, carrots, potatoes, then pour in chicken stock. Season with salt and pepper. Simmer for 20 minutes until vegetables are tender.
Stir in beans and simmer for 5 minutes. Add shredded chicken, cook 2-3 minutes, then stir in kale and cook 1-2 minutes until wilted.
Ladle into bowls, top with parsley, Parmesan, and thyme. Serve with toasted bread.
Notes
Feel free to add more herbs for extra flavor or adjust seasoning to taste.
