Tuscan Style Chicken Soup

A hearty and flavorful Tuscan-inspired chicken soup packed with vegetables, beans, and herbs, perfect for a comforting meal.

Ingredients

olive oil

  • 1 tbsp olive oil

vegetables

  • 1 piece onion (peeled and chopped)
  • 2 cloves garlic (peeled and minced)
  • 2 sprigs fresh thyme
  • 1 stick celery (sliced)
  • 2 medium carrots (peeled and chopped)
  • 2 medium potatoes (peeled and diced)

liquid

  • 1 litre chicken stock (good-quality)
  • ½ tsp salt
  • ½ tsp black pepper

cannellini beans

  • 400 g cooked cannellini beans (rinsed and drained)

chicken

  • 2 skinless cooked chicken breasts chicken breasts (shredded)

kale

  • 100 g kale (chopped)

fresh parsley

  • Small bunch fresh parsley (chopped)

Parmesan

  • 2 tbsp finely grated Parmesan

herbs for serving

  • to serve fresh thyme sprigs
  • to serve toasted granary bread

Instructions 

  • Heat olive oil in a large saucepan over low-medium heat. Cook onion for 10 minutes until softened.
  • Add garlic and thyme; cook for 2 minutes until fragrant.
  • Add celery, carrots, potatoes, then pour in chicken stock. Season with salt and pepper. Simmer for 20 minutes until vegetables are tender.
  • Stir in beans and simmer for 5 minutes. Add shredded chicken, cook 2-3 minutes, then stir in kale and cook 1-2 minutes until wilted.
  • Ladle into bowls, top with parsley, Parmesan, and thyme. Serve with toasted bread.

Notes

Feel free to add more herbs for extra flavor or adjust seasoning to taste.
