These homemade vanilla almond snack bars are a perfect blend of sweet, nutty, and chewy textures, ideal for a quick energy boost.

Ingredients

Base

  • 1/3 cup honey or brown rice syrup
  • 1 teaspoon pure vanilla extract
  • 1/4 cup almond meal
  • 1/8 teaspoon salt
  • 1 tablespoon almond butter
  • 1 1/3 cups whole almonds, roughly chopped
  • 5 medjool dates coarsely chopped
  • 3/4 cup salted sunflower seeds

Instructions 

  • Preheat oven to 300°F (149°C). Line an 8-inch or 9-inch square baking pan with parchment paper.
  • Mix honey, vanilla, almond meal, salt, and almond butter until combined. Fold in almonds, chopped dates, and sunflower seeds.
  • Press mixture firmly into the prepared pan. Bake for 20 minutes, then cool completely on a wire rack for 1 hour.
  • Refrigerate for 1 hour to firm up, then cut into bars and wrap individually. Store at room temperature for 1 week or refrigerated up to 2 weeks.

Notes

For best results, press the mixture very firmly into the pan before baking.
