These homemade vanilla almond snack bars are a perfect blend of sweet, nutty, and chewy textures, ideal for a quick energy boost.
Ingredients

honey or brown rice syrup

whole almonds, roughly chopped

Instructions
Preheat oven to 300°F (149°C). Line an 8-inch or 9-inch square baking pan with parchment paper.
Mix honey, vanilla, almond meal, salt, and almond butter until combined. Fold in almonds, chopped dates, and sunflower seeds.
Press mixture firmly into the prepared pan. Bake for 20 minutes, then cool completely on a wire rack for 1 hour.
Refrigerate for 1 hour to firm up, then cut into bars and wrap individually. Store at room temperature for 1 week or refrigerated up to 2 weeks.
Notes
For best results, press the mixture very firmly into the pan before baking.
