A warm and creamy vegan carrot soup perfect for a healthy meal. Simple to prepare and full of flavor.

Ingredients

olive oil

  • 1 tablespoon olive oil

chopped onions

  • 1 cup chopped onions

chopped carrots

  • 3 cups chopped carrots

fresh ginger, peeled and sliced

  • 2 tablespoons fresh ginger

garlic, peeled and chopped

  • 3 cloves garlic

vegetable broth

  • 4 cups vegetable broth (see notes)

apple cider vinegar

  • 1 tablespoon apple cider vinegar

toppings

  • cashew cream, pumpkin seeds, or hemp seeds (for garnish)

Instructions 

  • Heat olive oil in a large pot over medium heat. Add onions and cook until tender, about 5 minutes.
  • Add carrots and ginger; cook for 5-7 minutes. Add garlic and cook for 1 minute.
  • Pour in broth, bring to a boil, then simmer for 20-30 minutes until carrots are tender.
  • Remove from heat, stir in vinegar, and let cool slightly.
  • Blend the soup in batches until smooth. Serve garnished with toppings.

Notes

You can customize toppings with your favorite seeds or cream for added flavor.
