A warm and creamy vegan carrot soup perfect for a healthy meal. Simple to prepare and full of flavor.
Ingredients

Instructions
Heat olive oil in a large pot over medium heat. Add onions and cook until tender, about 5 minutes.
Add carrots and ginger; cook for 5-7 minutes. Add garlic and cook for 1 minute.
Pour in broth, bring to a boil, then simmer for 20-30 minutes until carrots are tender.
Remove from heat, stir in vinegar, and let cool slightly.
Blend the soup in batches until smooth. Serve garnished with toppings.
Notes
You can customize toppings with your favorite seeds or cream for added flavor.
