Delight in these rich, chocolatey vegan protein bars inspired by Ferrero Rocher, perfect for a nutritious snack or dessert.

Ingredients

Dough

  • 1 3/4 cups cocoa powder
  • 1 cup medjool dates
  • 1 1/2 cup vanilla protein powder
  • 1/4 cup sunbutter
  • 1/2 cup almond milk
  • 3/4 cup oat flour
  • 1 cup roasted hazelnuts
  • 1 cup chocolate chips
  • 1 tbsp coconut oil

Instructions 

  • Blend cocoa powder, dates, protein powder, sunbutter, almond milk, and oat flour until a thick dough forms.
  • Add hazelnuts and pulse until chopped and grainy.
  • Press the dough into a parchment-lined loaf pan and freeze for 2 hours.
  • Cut into slices, coat with melted chocolate and chopped hazelnuts, then freeze for 1 hour.
  • Enjoy your protein bars! Store in the freezer and thaw before eating.
