A flavorful vegan kale bread infused with garlic and herbs, perfect for a nutritious snack or meal.

Ingredients

Dry Ingredients

  • 3 cups all-purpose flour (You can also use Artisan bread flour for a more 'bread-like' texture)
  • 2 tsps baking powder
  • 0.5 tsp baking soda
  • 1 tsp garlic powder
  • 0.5 tsp dried basil
  • 0.5 tsp dried oregano
  • 0.25 tsp dried thyme
  • Pinch sea salt

Wet Ingredients

  • 4 cloves garlic, minced
  • 1.5 cups Almond milk (You can use your fave plant-based milk)
  • 1 Tbsp apple cider vinegar
  • 0.25 cup vegan butter, melted
  • 1 cup chopped kale, fresh or frozen (De-stemmed if fresh)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix dry ingredients in a large bowl.
  • Combine wet ingredients and stir into dry mixture until well blended.
  • Fold in chopped kale.
  • Pour batter into a greased loaf pan and bake for 30 minutes.

Notes

This bread is best enjoyed fresh and can be stored in an airtight container for up to 2 days.
