Delight in these healthy, gluten-free vegan oatmeal cookies made with simple ingredients and packed with flavor.

Instructions
Mix maple syrup, tahini, and sea salt until combined.
Grind ½ cup of oats into a rough flour and add to wet ingredients with remaining oats. Mix until combined.
Drop 8 mounds onto parchment-lined baking sheet, flatten into discs about ¼ inch thick.
Bake at 356°F (180°C) for 13-14 minutes until golden. Cool for 5 minutes, then transfer to wire rack.

Store in an airtight container for up to 3 days.
