Delight in these healthy, gluten-free vegan oatmeal cookies made with simple ingredients and packed with flavor.

Ingredients

Wet ingredients

  • 0.33 cup Maple syrup
  • 4 tbs Tahini
  • cups Rolled oats

Dry ingredients

  • 0.5 cup Ground rolled oats (from ½ cup of rolled oats)
  • 1 pinch Sea salt

Instructions 

  • Mix maple syrup, tahini, and sea salt until combined.
  • Grind ½ cup of oats into a rough flour and add to wet ingredients with remaining oats. Mix until combined.
  • Drop 8 mounds onto parchment-lined baking sheet, flatten into discs about ¼ inch thick.
  • Bake at 356°F (180°C) for 13-14 minutes until golden. Cool for 5 minutes, then transfer to wire rack.

Store in an airtight container for up to 3 days.
