Delicious and healthy vegan oatmeal cookies that are gluten-free and easy to make. Perfect for a quick snack or dessert.

Ingredients

Wet ingredients

  • 0.33 cup Maple syrup
  • 4 tbs Tahini

Dry ingredients

  • 1.25 cups Rolled oats (divided)
  • 1 pinch Sea salt

Instructions 

  • Mix maple syrup, tahini, and sea salt until combined.
  • Grind ½ cup of oats into a rough flour and add to wet ingredients with remaining oats. Mix until combined.
  • Drop dough onto parchment, flatten into discs, leaving space between cookies.
  • Bake at 356°F (180°C) for 13-14 minutes until golden. Cool on a wire rack.

Notes

Use a cookie scoop for uniform cookies and ensure they cool completely before serving.
