A moist and flavorful vegan pear cake perfect for a cozy dessert or snack, combining fresh pear puree with warming spices.
Ingredients
Dough

vegan butter

sugar (white or golden)

pear puree
(from about 1 ripe pear)

teaspoon
vanilla extract
Dry ingredients

flour

ground ginger
Topping

pear
(sliced for topping)

demerara sugar

Instructions
Preheat oven to 180°C (355°F).
Blend pear into a puree. Cream vegan butter and sugar, then mix in pear puree and vanilla.
Mix in flour, baking powder, and ginger to form a thick batter. Pour into a greased 18cm springform tin.
Arrange sliced pear on top and sprinkle with demerara sugar.
Bake for 40-45 minutes until a tester comes out clean.
Notes
Use ripe pears for best flavor and sweetness.
