Instructions
Heat oil in a skillet over medium-high heat.
Add kale, onion, garlic, water, salt, black pepper, and red pepper flakes; cover and cook until vegetables are tender, about 8-10 minutes.
Stir in cream cheese and ½ cup mozzarella until smooth, then transfer to a dish and top with remaining mozzarella and Parmesan.
Broil until cheese melts and browns slightly, then serve warm with crackers.
Notes
For a creamier dip, blend the mixture before baking.
