Ingredients

Dough

  • 1 cup water
  • ¼ cup milk
  • 3 tablespoons honey
  • 2 ¼ teaspoons active dry yeast (or instant yeast (1 packet))
  • 3 cups whole wheat flour ((plus more as needed))
  • 1 ½ teaspoons salt
  • 3 tablespoons unsalted butter (cut into 6 pieces and softened)

Instructions 

  • Combine water and milk; warm to 105-115°F. Mix in honey and yeast; let foam for 5-10 mins.
  • Add flour, salt, and butter; mix until combined. Knead on low for 8 mins until slightly sticky.
  • Transfer dough to oiled bowl; cover and let rise until doubled (~1 hour).
  • Punch down dough; shape into a rectangle, roll up, and place seam side down in greased pan. Let rise until top is just above pan (~30-45 mins).
  • Preheat oven to 350°F. Bake for 35-45 mins until internal temp reaches 200°F. Cool before slicing.

Notes

For best results, use fresh yeast and measure ingredients accurately.
