Ingredients

Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 unit lemon (Juice of 1 lemon)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Salad

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 unit cucumber, sliced
  • 1/4 red onion red onion, thinly sliced
  • 3 tablespoons olive oil (for dressing)
  • 1 tablespoon lemon juice (for dressing)

Instructions 

  • Marinate chicken: Mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate chicken for 30 minutes.
  • Grill chicken: Cook on medium-high heat for 6-7 minutes per side. Rest and slice.
  • Prepare salad: Combine greens, tomatoes, cucumber, and onion in a bowl.
  • Make dressing: Whisk olive oil, lemon juice, salt, and pepper.
  • Assemble: Top salad with sliced chicken, drizzle dressing, and toss gently.

Use fresh lemon for best flavor and adjust salt to taste.
