Ingredients

Zucchini

  • 2 cups zucchini grated (unpeeled, undrained)

Flour

  • 1.5 cups all-purpose flour or almond flour for GF

Cocoa powder

  • 0.5 cup unsweetened cocoa powder

Sugar

  • 0.75 cup granulated or coconut sugar

Oil

  • 0.5 cup vegetable or avocado oil

Vanilla extract

  • 1 tsp vanilla extract

Baking soda

  • 0.5 tsp baking soda

Salt

  • 0.5 tsp salt

Chocolate chips

  • 0.75 cup chocolate chips (optional but recommended)

Walnuts

  • 0.5 cup chopped walnuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8x8-inch pan.
  • Mix dry ingredients: flour, cocoa powder, baking soda, salt.
  • Combine sugar, oil, vanilla; add zucchini and mix.
  • Fold dry ingredients into wet; stir in chocolate chips and walnuts.
  • Spread batter in pan; bake 30–35 minutes. Cool and serve.

Notes

For a gluten-free version, use almond flour.
