A flavorful and moist bread packed with fresh zucchini, sharp cheddar, and aromatic herbs, perfect for any occasion.

Ingredients

Vegetables

  • 2 piece zucchini (Grated and squeezed to remove excess moisture.)
  • 2 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp chives (Chopped fresh chives.)
  • 1 tbsp parsley (Chopped fresh parsley.)
  • 1 tsp thyme leaves (Fresh thyme leaves.)
  • 2 cup sharp cheddar cheese (Shredded.)
  • 2 large eggs
  • 0.5 cup milk
  • 0.33 cup olive oil
  • 0.5 cup shredded cheddar cheese
  • 1 tsp chopped chives

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • Mix dry ingredients: flour, baking powder, salt, pepper, garlic powder, herbs.
  • In a separate bowl, whisk eggs, milk, and olive oil. Stir in grated zucchini and cheese.
  • Combine wet and dry ingredients until just mixed. Pour into prepared pan.
  • Bake for 40 minutes or until golden and a toothpick comes out clean.

Notes

For extra flavor, sprinkle additional herbs on top before baking.
