Ingredients

Canned Goods

  • 2 cans Tuna
  • 16 ounces Pinto Beans (Reduced Sodium)
  • 10.6 ounces Greek Yogurt (Fat Free Plain)
  • 10 tablespoons Salsa
  • 7 tablespoons Guacamole
  • ½ teaspoon Crushed Red Pepper
  • 1 packet Taco Seasoning Mix (Low Sodium)
  • ½ packet Taco Seasoning Mix (Low Sodium)
  • ½ cup Mexican Cheese (Reduced Fat)
  • 2 ounces Water

Instructions 

  • Drain tuna and place in a bowl.
  • Add ½ of Greek Yogurt, ½ packet Taco Seasoning, and Sriracha; mix well.
  • Spread mixture into a larger bowl as the first layer.
  • Add Mexican Cheese on top of the first layer.
  • Drain and rinse Pinto Beans, then mash and mix with remaining Taco Seasoning and Water.
  • Microwave bean mixture for 45 seconds, then layer on top of cheese while hot.
  • Add Guacamole, then remaining Greek Yogurt, salsa, and optional toppings like olives and green onions.
