A delicious and nutritious baked oatmeal with chocolate flavor, perfect for a satisfying breakfast or snack.

Ingredients

Dry Ingredients

  • 2 cups gluten-free rolled oats
  • 1 cup oat flour (blended oats)
  • 1 tsp baking powder
  • 1.5 tsp salt
  • 0.33 cup cocoa powder
  • 2 scoops chocolate protein powder

Wet Ingredients

  • 1.5 cups unsweetened almond milk
  • 2 eggs eggs
  • 0.5 cup coconut oil, melted
  • 0.25 cup maple syrup

Add-ins

  • 1 cup dark chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and grease an 8x8 baking dish.
  • Blend half the oats into flour; leave the rest whole.
  • Mix dry ingredients in a large bowl. In a separate bowl, combine wet ingredients.
  • Pour wet into dry, mix until just combined, then fold in chocolate chips.
  • Pour batter into the dish, top with extra chocolate chips, and bake for 28-33 minutes.
  • Let cool slightly, then serve warm with toppings of choice.

Notes

For added flavor, top with a drizzle of peanut butter or a dollop of Greek yogurt.
