A hearty and flavorful homemade bread featuring oats, perfect for breakfast or sandwiches.
Ingredients
Oats

cup
oatmeal (regular, not quick oats)
1
cup
boiling water
½
cup
warm water (about 110º)
2 ¼
teaspoons
dry active yeast (1 envelope)
2 ½
cups
all-purpose flour
2
tablespoons
brown sugar
1
teaspoon
salt
2
tablespoons
butter, cut into pieces
(plus more for greasing)
Instructions
Grease a loaf pan and set aside.
Pour boiling water over oats; stir and cool to room temperature.
Activate yeast in warm water; set aside.
Mix flour, sugar, and salt; add oats, yeast, and butter. Knead until smooth.
Let dough rise until doubled, then shape and place in pan. Let rise again.
Bake at 375ºF (190ºC) for 30-40 minutes until golden and hollow-sounding.
Notes
For a softer crust, brush with butter after baking.
