A hearty and flavorful homemade bread featuring oats, perfect for breakfast or sandwiches.

Ingredients

Oats

  • 1 cup oatmeal (regular, not quick oats)
  • 1 cup boiling water
  • ½ cup warm water (about 110º)
  • 2 ¼ teaspoons dry active yeast (1 envelope)
  • 2 ½ cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 2 tablespoons butter, cut into pieces (plus more for greasing)

Instructions 

  • Grease a loaf pan and set aside.
  • Pour boiling water over oats; stir and cool to room temperature.
  • Activate yeast in warm water; set aside.
  • Mix flour, sugar, and salt; add oats, yeast, and butter. Knead until smooth.
  • Let dough rise until doubled, then shape and place in pan. Let rise again.
  • Bake at 375ºF (190ºC) for 30-40 minutes until golden and hollow-sounding.

Notes

For a softer crust, brush with butter after baking.
