A delicious high-protein pasta dish combining tuna, oats, and creamy Alfredo flavors for a satisfying meal.

Ingredients

Dry Goods

  • 0.25 cup Rolled Oats (for oat flour)
  • 2 cans Tuna (10 Ounces each) (drained)
  • 1 tablespoon Butter (Unsalted)
  • 0.5 teaspoon Minced Garlic (or 1 Clove Garlic)
  • 1.5 ounces Mushrooms (Optional)
  • 8 ounces Milk Substitute (or Milk)
  • 6 tablespoons Cream Cheese (Fat Free)
  • 0.25 teaspoon Black Pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Parsley
  • 10 tablespoons Parmesan Cheese (Grated)
  • 64 ounces Water
  • 1 package Fettuccine (8 Ounces Mung Bean)

Instructions 

  • Blend oats into flour.
  • Drain tuna.
  • Melt butter in a saucepan over medium heat, add garlic and mushrooms, cook for 1 minute.
  • Add remaining ingredients except Parmesan, Fettuccine, and water; stir and cook 2-3 minutes until thickened.
  • Stir in Parmesan cheese, cook 1 minute.
  • Reduce heat, add tuna, cook 2 minutes, stirring every 10-15 seconds.
  • Cook and drain Fettuccine, serve topped with Tuna Alfredo.

Notes

Use fresh parsley for best flavor and consider adding a squeeze of lemon for brightness.
