  • 1/4 tsp salt: Enhances the flavors and balances the sweetness.
  • 100g (3.5 oz) white chocolate: Make sure it’s vegan! This adds creaminess to the filling.
  • 235ml (1 cup) full-fat canned coconut milk: The star ingredient for a rich and creamy filling.
  • 235ml (1 cup) dairy-free milk alternative: Almond milk or oat milk work great here.

Step-by-Step Instructions

A close-up side view of a Vegan Chai Chocolate Tart with a shiny ganache topping.

Ready to bring this tart to life? Follow these simple steps:

  1. In a large bowl, mix the oat flour, cocoa, and salt. Pour in the melted coconut oil and maple syrup, stirring until a dough forms.
  2. Press the dough into a round 8-inch loose-bottom tart tin, evenly covering the bottom and sides. Freeze for 30 minutes.
  3. Meanwhile, pour the dairy-free milk into a saucepan and bring to a quick boil. Remove from heat, add the tea bags, and leave to brew for 5 minutes. Remove the tea bags and set the infused milk aside.
  4. In the same saucepan, combine the coconut milk, cornflour, and agar agar. Mix until the cornflour is completely dissolved. Heat over medium heat, then add the brewed tea milk and white chocolate. Stir until the chocolate melts and the mixture is smooth.
  5. Allow the filling to cool for 10 minutes before pouring it into the tart crust.
  6. Transfer the tart to the fridge and let it set for at least 2 hours.
  7. Once set, decorate with your favorite toppings and enjoy!

Pro Tips for the Perfect Tart

Let’s make sure your Vegan Chai Chocolate Tart turns out perfectly:

  • Chill the crust: Freezing the crust helps it hold its shape during baking.
  • Infuse longer: If you want a stronger chai flavor, leave the tea bags to brew a bit longer.
  • Check for smoothness: Ensure the filling is completely smooth before pouring it into the crust for the best texture.
  • Don’t rush cooling: Allow the filling to cool before adding it to the tart base to prevent it from getting soggy.
  • Experiment with toppings: Fresh fruit, nuts, or a drizzle of vegan chocolate sauce can elevate your tart beautifully.
  • Use quality ingredients: Since this is a simple recipe, using high-quality cocoa and chocolate can significantly enhance the flavor.
  • Be patient: Let the tart set fully in the fridge for the best results; this ensures the filling is firm and sliceable.

Common Mistakes and Troubleshooting

Even the best of us can face a few hiccups in the kitchen. Here’s how to troubleshoot:

  • Crust crumbling: If your crust is falling apart, try adding a bit more coconut oil or maple syrup to bind it better.
  • Filling too runny: If the filling didn’t set, ensure you added enough agar agar and that it was heated properly to activate its thickening properties.
  • Overcooked crust: Keep an eye on the crust while it’s freezing; it should be firm to the touch but not hard.
  • Flavor lacking: Always taste the filling before pouring it into the crust. Adjust sweetness or spice levels as needed.

Variations to Try

Let’s mix things up! Here are some delicious variations you can try:

  • Mint Chocolate Chai Tart: Add a few drops of peppermint extract to the filling for a refreshing twist.
  • Spicy Ginger Chai Tart: Incorporate some ground ginger or candied ginger into the filling for an extra kick.
  • Fruit-Infused Filling: Fold in some fresh berries or banana slices into the filling before pouring it into the crust.
  • Coconut Crust: Swap the oat flour for shredded coconut for a tropical twist!

Storage and Make-Ahead Instructions

Great news! This tart is perfect for making ahead of time:

  • Refrigerator: Store your tart in an airtight container in the fridge for up to 5 days.
  • Freezer: You can freeze the tart for up to 2 months. Just ensure it’s well-wrapped to prevent freezer burn!
  • Thawing: When ready to enjoy, simply transfer it to the fridge for several hours to thaw before serving.

Preheat your oven to 400°F (200°C). Peel and dice the sweet potato into 1-inch cubes. Drain and rinse the chickpeas, then pat them dry. Toss both in a bowl with the neutral oil and spices until evenly coated.

Spread them out on a baking sheet lined with parchment paper and roast for about 25-30 minutes, or until they’re golden and tender, flipping halfway through for even cooking.

Step 2: Prepare the Quinoa

While the sweet potatoes and chickpeas roast, rinse the quinoa under cold water to remove its natural bitterness. In a medium saucepan, combine the quinoa with 1 and 1/2 cups of water or vegetable broth and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

Step 3: Sauté the Vegetables

In a large skillet, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Toss in the fresh spinach and minced garlic, cooking until the spinach wilts, about 2-3 minutes. Season with a pinch of salt and pepper.

Step 4: Make the Almond Sauce

In a small bowl, mix together the almond butter, lemon juice, turmeric, and enough water to achieve your desired sauce consistency. I usually start with 2 tablespoons and add more if needed. Taste and adjust seasoning as desired.

Pro Tips for Perfect Sweet Potato Quinoa Bowls

Ready to elevate your cooking game? Here are some expert insights:

  • Cooking Quinoa: Rinse your quinoa beforehand to ensure it’s fluffy and not mushy.
  • Roasting Tips: Make sure to spread your vegetables out on the baking sheet; overcrowding can lead to steaming instead of roasting.
  • Customize the Sauce: Feel free to experiment with different nut butters like peanut butter or add spices like cumin for a flavor twist!
  • Fresh Herbs: Don’t skip the garnishes! Fresh herbs like cilantro or parsley add a burst of freshness.
  • Storage Made Easy: Store each component separately in airtight containers to keep everything fresh throughout the week.
  • Meal Prep Hero: Roast a large batch of sweet potatoes and chickpeas to use in various meals throughout the week.

Common Mistakes and Troubleshooting

Cooking is all about learning, and sometimes things don’t go as planned. Here’s how to troubleshoot:

  • Too Dry Quinoa: If your quinoa ends up dry, add a splash of water and stir it in gently.
  • Soggy Sweet Potatoes: If your sweet potatoes are soggy, make sure they’re diced evenly and not overcrowded on the baking sheet.
  • Flavorless Sauce: Adjust the seasoning by adding more lemon juice or salt to enhance the flavor.

Variations to Try

Here are some fun twists on this recipe to keep things exciting:

  • Mexican Fiesta Bowl: Add black beans, corn, and top with avocado and salsa.
  • Asian-Inspired Bowl: Substitute the almond sauce with a sesame ginger dressing and add edamame.
  • Italian Flair: Mix in roasted cherry tomatoes and top with balsamic glaze.
  • Breakfast Bowl: Add a fried egg on top for a delicious brunch option!

Storage and Make-Ahead Instructions

This recipe is a dream for meal prep! Here’s how to store and reheat:

  • Refrigeration: Store individual components in airtight containers in the fridge for up to 5 days.
  • Freezing: You can freeze roasted sweet potatoes and chickpeas for up to 2 months. Just let them cool completely before freezing.

  1. Melt the butter: In a small saucepan, melt your unsalted butter over medium heat, stirring consistently until it turns a golden brown color and develops a rich, nutty aroma. This should take about 3-5 minutes. Once done, transfer the browned butter to a large mixing bowl and let it cool slightly.
  2. Prepare the wet ingredients: In the bowl with the cooled brown butter, whisk in granulated sugar, brown sugar, and maple syrup until smooth. Then mix in pumpkin puree, egg yolk, and vanilla extract until everything is well combined.
  3. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. This ensures even spice distribution throughout your cookies.
  4. Combine wet and dry ingredients: Gradually fold the dry ingredients into the wet mixture, stirring until just combined. The dough should feel soft and slightly sticky.
  5. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 24 hours. Chilling the dough allows the flavors to meld and improves the cookie texture.
  6. Preheat the oven: When you’re ready to bake, preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  7. Shape the cookies: Using a cookie scoop, portion out the chilled dough into 1.5-tablespoon balls and place them about 2 inches apart on the prepared baking sheets.
  8. Bake the cookies: Bake for 10-12 minutes until the edges are set but the centers remain slightly underbaked. This creates that perfect chewy texture!
  9. Cool and glaze: Let the cookies rest on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. For the optional glaze, whisk together powdered sugar, maple syrup, and milk until smooth, then drizzle it over the cooled cookies.

Pro Tips for Perfect Cookies

  • Brown the butter carefully: Keep an eye on the butter as it browns to prevent burning; the nutty flavor is what makes these cookies special!
  • Don’t skip chilling: Chilling the dough helps the cookies hold their shape and enhances flavor.
  • Use a cookie scoop: This ensures uniform cookie sizes for even baking.
  • Watch the bake time: Ovens vary; adjust the baking time based on your oven’s quirks.
  • Experiment with spices: Feel free to add more spices like cardamom or allspice for a unique twist!
  • Store properly: Keep cookies in an airtight container to maintain freshness.
  • Make ahead: You can prepare the dough in advance and freeze it for a quick treat later!
  • Drizzle with glaze: For an extra special touch, go wild with the glaze – it’s a great way to add visual appeal!

Common Mistakes and Troubleshooting

Even the best bakers stumble sometimes! Here are some common pitfalls and how to avoid them:

  • Cookies spreading too much: Ensure your dough is chilled before baking.
  • Overbaking: Keep an eye on your cookies; they should be set at the edges but soft in the center.
  • Dry cookies: Avoid overmixing the dough; mix just until combined.
  • Flavor too bland: Taste your batter before baking—this is your chance to adjust spices!

Delicious Variations to Try

Want to switch things up? Here are some fun variations to try:

  • Chocolate Chip Delight: Stir in a cup of chocolate chips for a sweet twist!
  • Nuts for Nuts: Add chopped pecans or walnuts for a crunchy texture.

To keep your cookies fresh and delicious:

  • Refrigerator: For longer freshness, keep cookies in the fridge for up to two weeks.
  • Freezing Dough: You can freeze cookie dough balls for up to three months. Just thaw and bake when you’re ready!

Steps

  • Prepare the Candied Walnuts: Preheat your oven to 350°F (175°C). In a bowl, whisk together 1 egg white and 1 teaspoon of water. Toss in 2 cups of walnut halves, coating them evenly. In another bowl, mix 2 tablespoons of maple sugar, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of salt. Sprinkle this over the walnuts and toss to coat. Spread on a baking sheet and bake for 10-15 minutes until crispy.
  • Make the Dressing: In a small bowl or mason jar, combine 1/4 cup of apple cider vinegar, 1 minced shallot, 2 teaspoons of Dijon mustard, 2 teaspoons of honey, and a pinch of salt. Gradually whisk in 1/3 cup of olive oil until well emulsified. Adjust sweetness to taste.
  • Massage the Kale: In a large bowl, combine 8 cups of chopped kale with 1/4 cup of extra-virgin olive oil, 1 teaspoon of salt, and 2 tablespoons of apple cider vinegar. Massage the kale for about 2-3 minutes until it softens and darkens in color.
  • Combine Ingredients: Add the diced red onion, candied walnuts, dried cranberries, and Parmesan cheese to the massaged kale. Drizzle the dressing over the salad and toss until everything is well coated.
  • Serve and Enjoy: If using, top with diced avocado and serve immediately. Alternatively, let it chill in the fridge for about 30 minutes to allow the flavors to meld.

Pro Tips for Salad Success

  • Massaging Kale: This step is crucial! It breaks down the tough fibers, making the kale tender and more enjoyable to eat.
  • Make Ahead: Prepare the dressing and candied walnuts in advance to save time on busy days. Just combine everything before serving.
  • Adjust Ingredients: Feel free to play with the ingredient ratios based on your taste preferences. Love cheese? Add more! Want it sweeter? Double the honey!
  • Store Properly: If there are leftovers, store the salad in an airtight container without the dressing to keep the kale fresh.
  • Experiment with Proteins: Add grilled chicken, shrimp, or chickpeas for a protein boost and make it a complete meal.
  • Use Fresh Ingredients: Fresh, high-quality ingredients will elevate the flavors, so choose the best you can find!
  • Presentation Matters: Serve the salad in a large bowl or platter for a beautiful presentation that invites everyone to dig in!
  • Customize Your Crunch: Swap in different nuts or seeds for variety, such as pecans, almonds, or pumpkin seeds.

Common Mistakes and Troubleshooting

  • Over-massaging Kale: Stop once the kale is tender; overdoing it can make it mushy.
  • Too Much Dressing: Start with a little, and add more as needed. You can always add, but it’s tough to take it away!
  • Burnt Walnuts: Keep an eye on them in the oven; they can burn quickly! Stir halfway through baking.
  • Not Enough Flavor: Adjust the dressing and seasoning to your taste. Don’t be afraid to add more acidity or sweetness!

Variations on This Kale Salad

If you’re feeling adventurous or just want to switch things up, here are some fun variations you can try:

  • Southwest Kale Salad: Add black beans, corn, diced avocado, and a lime vinaigrette for a zesty twist.
  • Asian-Inspired Kale Salad: Toss in shredded carrots, sliced bell peppers, and a sesame ginger dressing.
  • Mediterranean Kale Salad: Incorporate feta cheese, olives, and cherry tomatoes with a lemon-oregano dressing.
  • Fruit-Forward Kale Salad: Include sliced strawberries, mandarin oranges, and a poppy seed dressing for a refreshing change.

Storage and Make-Ahead Instructions

This kale salad can be made ahead for busy days! Here’s how to store it:

  • In the Fridge: Store the salad components (kale, nuts, cheese, and toppings) separately in airtight containers. Assemble just before serving to keep everything fresh.
  • For the Dressing: Store the dressing in a sealed jar in the fridge for up to a week. Shake well before using.
  • Leftovers: If you have leftovers, keep them in the refrigerator for up to 2 days. Note that the kale might lose some crunch, but it will still taste great!
